The
Caverns
Little Hills Winery recently acquired
access to under ground caverns located at 300 Water Street
in St. Charles to
localize our wine making and bottling process. The
caverns were originally occupied in 1849 by the Fischbach
Brewing Company owned by John Fischbach and Mary Pfister.
John's nephew, Jacob Fischbach, served an apprenticeship in
the brewing industry at Brewery Haag in Alsance Lorraine
from 1878 to 1880. He arrived in America in 1907 with
his sister Margaret and joined his Uncle in St. Charles,
Missouri. He served as President and Brewmaster until
1965 when the family sold the brewery to Nick VanDyke III.
The VanDyke Brewing Company operated at this location until
1976 when it closed.
Although remnants of the brewing
history remain in parts of the caverns; today, Little Hills
uses a portion of these caverns to make, bottle and store
their wine.
On limited occasions our
caverns are open to small groups for tour. Join our
Event Distribution list to receive notification on future
tours.
